WAKE UP SOUP
Ingredients (4 Serves)
|250G||NUTS (E.G. BRAZIL NUTS, HAZELNUTS, ALMONDS)|
||RUBBED PEEL OF ONE ORANGE|
||KISSA BLACK TEA POWDER|
|1 TBSP||OLIVE OIL|
||RUBBED PEEL OF ONE LEMON|
||SOY MILK, FOR THE MILK FROTH|
||KISSA EARL GREY TEA POWDER, TO SPRINKLE|
This light & fluffy detox soup with pear and celery is your ideal choice for a light meal. Spiced nuts and KISSA Black Tea Powder ensure you energy and well-being, you’ll love this Wake up Soup.
To prepare the nuts, preheat the oven to 150 °C (upper/lower heat). Lighly whip the egg whites with a fork. Add nuts, sugar, rubbed orange peel, salt and KISSA Black Tea Powder and mix up well. Put on a baking tray covered with baking paper and bake in the oven for about 20-30 minutes until lightly brown and the nuts are dry. Turn every 10 minutes. Let the nut mix cool down and store in an airtight container up to one month.
Melt butter and olive oil in a pot. Peel the shallots, dice and stew in butter and oil for about 5 minutes. Peel the celery and pear, remove the core and chop into rough pieces. Put in a pot with ginger, bayleaf, fennel seeds and rubbed lemon peel. Fill up with vegetable soup and coconut milk and let simmer for about 20 minutes. Puree the soup and season with salt and pepper.
Warm up the soup and divide evenly on 4 plates. Froth the soy milk, put one spoonful on each plate and sprinkle with KISSA Earl Grey Tea Powder. Serve with the spiced nuts.
