Matcha breakfast cake – detox made easy!

Ingredients Matcha Breakfast Cake

Ingredients for 1 cake pan:

  • 3 tsp KISSA Matcha Basic
  • 100ml almond drink
  • 1 tablespoon lemon juice
  • 200g zucchini
  • 200g white almonds, ground
  • 50g oat flour plus 1 tablespoon for the mold
  • 1 pinch of salt
  • 1 teaspoon cream of tartar baking powder
  • 1 teaspoon baking soda
  • 100g birch sugar
  • 1 pinch of vanilla powder or half a vanilla bean
  • 30g olive oil
  • 30g pumpkin seed oil
  • Finely grated peel of half an organic lemon
  • 1 tablespoon vegan margarine for the mold
  • 3 teaspoons birch sugar for sprinkling

Preparation of Matcha Breakfast Cake

  1. Preheat oven to 170 °C top/bottom heat (150 °C fan oven).
  2. Mix almond drink with lemon juice and set aside.
  3. Wash the zucchini and grate it coarsely.
  4. Put the almonds, oat flour and salt in a bowl. Finely sift 2 teaspoons of KISSA Matcha Basic over the top. Fold in the baking powder and baking soda with a fork for about 1 minute.
  5. Mix the birch sugar, vanilla, both types of oil, lemon zest and almond milk (which has now become a kind of “buttermilk” due to the addition of the lemon juice) well in another bowl.
  6. Then add it to the Matcha flour together with the zucchini and fold in with a wooden spoon or a dough scraper until all ingredients are well incorporated.
  7. Grease a cake tin with margarine, dust with flour and pour in the batter. Bake the cake in the preheated oven for 45-50 minutes.
  8. Use a skewer to test whether the cake is ready: if it comes out cleanly without any dough residue, the cake is baked through.
  9. If some dough sticks to the skewer, bake the cake for another 10-15 minutes. Take the cake out of the oven, let it cool a little and then turn it out onto a plate.
  10. Mix birch powdered sugar and 1 teaspoon KISSA Matcha Basic together and sift over the cooled cake.
