Ingredients
for approximately 60 pieces
Dough:
2 tsp KISSA Matcha Basic
280 g wheat flour
100 g icing sugar
250g cold vegan margarine
Seeds from half a vanilla bean
150 g ground white almonds
3 cardamom pods
finely grated zest of a small organic lemon
Matcha sugar:
3 tsp KISSA Matcha Basic
150 g icing sugar
Seeds from half a vanilla bean
Preparation:

Place flour, sugar, margarine, vanilla extract and ground almonds in a bowl.

Roughly crush the cardamom pod in a mortar, remove the shell and grind the seeds very finely.

Add the lemon zest and cardamom powder to the bowl.

Sift KISSA Matcha Basic over the top.

Quickly knead all ingredients together with the dough hook of the food processor to form a smooth dough.

Wrap in cling film and let rest in the refrigerator for 2 hours.

Preheat the oven to 170 °C (top/bottom heat) (150 °C fan oven) and line a baking tray with baking paper.

Shape the chilled dough into finger-thick rolls.

Cut the rolls into pieces about 3 cm long, shape them into rolls that taper to a point at the ends and place them on the baking sheet in a crescent shape.

Bake in the oven for 7-8 minutes until lightly golden.

Dust the vanilla crescents with powdered sugar and vanilla extract, then finely sift KISSA Matcha Focus over them.
