Christmas time is cookie time – and hardly any pastry is more fitting than vanilla crescents. Delicate on the outside, buttery on the inside, with a delicate vanilla note. In this KISSA version, the classic gets an upgrade: Matcha vanilla crescents with KISSA Matcha Focus.

MATCHA VANILLEKIPFERL

The finely ground green tea not only gives the dough a beautiful, naturally green color, but also an exciting interplay of flavors: subtle bitterness, nuttiness, citrus notes – perfectly combined with vanilla, almonds, and cardamom. This transforms simple crescent cookies into little moments of indulgence that make your Christmas season consciously greener.

Whether as a gift from the kitchen, on the cookie plate or as an accompaniment to your matcha latte – these matcha vanilla crescents fit anywhere it gets cozy.

Ingredients

for approximately 60 pieces

Dough:

2 tsp KISSA Matcha Basic

280 g wheat flour

100 g icing sugar

250g cold vegan margarine

Seeds from half a vanilla bean

150 g ground white almonds

3 cardamom pods

finely grated zest of a small organic lemon


Matcha sugar:

3 tsp KISSA Matcha Basic

150 g icing sugar

Seeds from half a vanilla bean


Preparation:

  1. Place flour, sugar, margarine, vanilla extract and ground almonds in a bowl.

  2. Roughly crush the cardamom pod in a mortar, remove the shell and grind the seeds very finely.

  3. Add the lemon zest and cardamom powder to the bowl.

  4. Sift KISSA Matcha Basic over the top.

  5. Quickly knead all ingredients together with the dough hook of the food processor to form a smooth dough.

  6. Wrap in cling film and let rest in the refrigerator for 2 hours.

  7. Preheat the oven to 170 °C (top/bottom heat) (150 °C fan oven) and line a baking tray with baking paper.

  8. Shape the chilled dough into finger-thick rolls.

  9. Cut the rolls into pieces about 3 cm long, shape them into rolls that taper to a point at the ends and place them on the baking sheet in a crescent shape.

  10. Bake in the oven for 7-8 minutes until lightly golden.

  11. Dust the vanilla crescents with powdered sugar and vanilla extract, then finely sift KISSA Matcha Focus over them.

  • Chill the dough well: The resting time in the refrigerator makes the crescent rolls easier to shape and helps them retain their shape in the oven.

  • Sift the matcha finely: This will prevent lumps in the dough and the matcha sugar – ensuring an even, beautiful color.

  • Aroma boost: The combination of lemon, cardamom, and matcha makes these crescent rolls especially exciting. For a more intense flavor, add a little more lemon zest next time.
